3. Understanding Cake Sculpting: Art Meets Baking

  • Who Can Do It?: Anyone can do it! From beginners to advanced bakers. You just have to start small with your design. Carve something simple at first, like a heart or a ball. Then work your way up to sculpting more intricate pieces. All it takes is practice.

  • Tools: There are a variety of cake sculpting tools. A few examples of the tools we will use in the Valentine's Day Vintage Heart Cake Decoration Class are: bench scrapers, chef's knives, offset spatulas, and more. For vintage cakes you'll also be sure to pay attention to the style of piping tips like the ones shown above.

  •  Techniques: Jamie cakes provides laminated examples for students to practice on before they apply it to their cake. Each piping tip has a variety of outcomes. Practicing these techniques is key to becoming a great cake decorator.

  • Career Potential: Introduction to cake sculpting as a professional path within pastry arts. They can also attend the Lane Community College summer camps or further their career in baking at the LCC baking and pastry program.

  • Challenges and Rewards: Remember, there are going to be many mistakes made, and that's ok! In cake decorating, you have to trust the process. One technique you'll use is a crumb coat. A crumb coat catches all the crumbs from the cake before adding the final buttercream layer. This process is ugly, but it will get better from there. Many people who have taken cake decorating at Jamie Cakes come in thinking they won't be able to complete their cake, but end up leaving with beautiful creations worth selling.
